Cilantro Lime Edamame Salad

I love edamame as a healthy and delicious snack. And it’s not just me. Whn my daughter was four she could easily sit and eat an entire bowl of edamame. Not only is it delicious, but it’s gluten free! Here is a delicious, healthy and refreshing summer salad, though you can eat it all year round. It’s simple, gluten free and fabulous. Feel free to spice it up with some diced jalapeno or chili pepper.

DRESSING:
3 TBSP fresh lime juice
2 TBSP Extra Virgin Olive Oil
2 TBSP Canola oil
1 small fresh garlic clove minced
1/2 tsp agave nectar

SALAD:
1 can white shoepeg corn
1 cup edamame, cooked and cooled
1 can gf black beans, rinsed and drained
1/2 cup red onion, diced small
1/2 cup fresh cilantro, chopped

Whisk the dressing ingredients in a bowl. Set aside. In another bowl add corn, edamame, black beans, onion and cilantro. Toss to combine. Drizzle dressing over salad and toss. Refrigerate if you don’t eat it right away. Flavors get better after a day in the refrigerator.
