Gluten Free Mickey Mouse Waffles

The first time I made it to Disney World, I was 24. I never got to experience the parks at a young age and feel that magical wonder that children do. But even at a grown up age, we still had fun. My husband and I had only been married two years at the time. We were young and full of energy. So we did all four parks in two days. Now, I can’t imagine doing something so crazy. Especially since we went in June, in the dead heat of summer, and on Star Wars weekend. But we were thrilled. We didn’t even know we had planned the trip on star wars weekend so what a pleasant surprise it was to walk up to Hollywood Studios and see storm troopers lining the roof and pointing their blasters at us as we approached the ticket booth.

Now that we have kids, we have already been back three times. We want them to enjoy the parks while they are at the right age for it and they are right in that sweet spot. But one of the things that my daughter Sydney and I can’t enjoy along with the other girls is many of the divine Disney treats. She longs for a Mickey pretzel to be gluten free or the meatballs at Tony’s or the Tonga Toast at Kona Cafe. But thankfully Disney is pretty gluten friendly. We have been able to manage quite well. And, as always, in an effort to not cheat, we have to be creative with what it is that we CAN eat.

One way was taking this recipe from the Pamela’s website. Now, let me just say, I LOVE Pamela’s baking mix. Honestly, it has been such a lifesaver. My kids love it. And now, we all eat it and nobody complains because it’s just delicious and let’s be honest, one set of pancakes on a griddle makes it much easier to prevent cross contamination.

I purchased my own mini Mickey Mouse waffle maker and it is so easy to use. I literally whip this batter up and use about a heaping 1/4 Cup of mix once it’s blazing hot. It cooks until the light goes out and then I take a fork and flip the waffle and allow cooking for another minute or two. I prefer to do this extra cook time to get crispy waffles. Obviously, you cook them to your own liking.

My family loves these so much. We have literally taken the ingredients with us to the beach and we have a quick easy gluten free breakfast ready in no time. I have also cooked these waffles ahead of a trip and popped them on foil in a toaster oven or regular oven and they are done quick and taste like we just made them. Drizzle them with butter and maple syrup – YUM!

And on our last trip to Disney World, we made a stop at one of our favorite breakfast places and Sydney said, mom, the gluten free waffles are okay, but I like yours better. Uh…Sorry Mickey. Maybe you should try out Pamela’s recipe as well. They sure are good!

Ingredients

  • 1 Cup Pamela’s baking and pancake mix

  • 2 large eggs

  • 3/4 Cup water

  • 1 TBSP oil

Directions

  • Mix all ingredients together until there are no lumps. Batter should not be too thin or too thick. Bake immediately in preheated, greased waffle iron. Serve waffles hot off the iron. For crispier waffles, increase baking time.
  • Helpful hint: Try making extra and freeze for later. Wrap in foil or plastic to store in freezer. Remove wrap before reheating in your toaster. Can be used for sandwich bread in a pinch. Great for open face sandwiches!
