This is a great recipe to make with kids. My daughters love to help peel the bananas and squish them up. It’s simple and the girls are always more willing to try and eat something if they have a hand in making it. The perfectionist in me has to remember that they need to be messy and I can always clean up those messes. The important thing is that we are spending time together in the kitchen.
I have been making this bread for years. My husband has taken many loaves to work with him to share with the staff. Feeding and caring for the caregivers is a ministry that has been important to me since we were married. It’s amazing how a warm slice of banana bread can cheer someone’s spirit after a difficult day of caring for others. The recipe is easy to double. I encourage you to not only make it for yourself, but make an extra loaf and share it with someone who needs a slice of encouragement today.
INGREDIENTS:
1 cup large very ripe mashed bananas (3-4)
1/4 cup cooking oil (canola or vegetable)
1 egg
3/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
pinch salt
1 1/2 cup BYLM gluten free baking all-purpose four
DIRECTIONS:
Peel bananas in a mixing bowl. Gently mash, leaving a generous amount of lumpiness. Next add the oil and egg. Mix again slowly. Add Sugar and stir. Now add the rest of the dry ingredients. I always add the flour last and blend in slowly. When the ingredients are all incorporated, there will still be some lumps. If not, don’t stress. It will still taste good, but the texture at the end may be a little different. Trial and error is not a bad thing. Mix all ingredients in a mixer or simply by hand with a whisk until just moist. Pour into a greased bread pan. Bake at 350* for 50 minutes. It is done when a knife inserted comes out clean. If not, give it a few more minutes. Mine usually doesn’t need more time unless I double the recipe and then about five more minutes gets the job done. Let the bread cool and serve. It’s good on its own, with a cup of coffee, or with a spread of butter and a sprinkle of sugar. It never lasts more than a day at my house. Even the babies wolf it down!
